A festive fête


Please excuse the rather plain cake plate for serving; I do believe that Mom deserves the frilliest, prettiest of cake stands, but for fear of losing it all in transport, I had to err on the side of (dowdy) sensibleness.

Now with the holiday season in (almost) full swing, one might be expect to find me knee-deep in mistletoe and ornaments. And while those baubles have a place in the house these days, there are also cake pans laying about, a box of icing tips open and waiting, and some birthday candles at the ready.

Today is someone's birthday.

I am lucky enough to have both a Mum and a Mom. "Mum" is my own mother, a woman after whom I follow in many ways - our humour, our aesthetic, and our looks (though neither of us truly see it), are rather in sync. We have a shorthand version of communication, where I can simply describe a situation, often searching to find the right words, and even with those gaps she instinctively knows what I mean and how I would react; because, in truth, she'd most likely react the same way.

My "Mom" is my husband Sean's mother. Coming into my life when I was already headstrong and full of opinions, she is the person who has brought me a new perspective. With distinctly different backgrounds and experiences, it is because of our divergent styles that she has shown me new avenues to expand my horizons. For instance, I never knew how much I adored Depression Glass until I saw her charming collection, and she is now the one with whom I am happy to wander antique markets and country stores.

She is a quilter, whereas I come from a family of knitters; it has been her love of that art that has taught me to appreciate the details of a well-stitched piece, and the beauty in fabrics. It is with her that I have enjoyed conversations over a cup of tea, shared at a tiny table laid perfectly with china and silver and a tiered tray with filled with dainty sandwiches, delectable sweets and delicate scones with cream.

She was the one with whom I bought my earrings for my wedding day.

But most of all what Mom has brought into my life has been enthusiasm; whether it be for the seasons (she has a greener-than-green thumb), the holidays or her grandsons, Mom is one that is ready to embrace each one, with arms open wide. In truth, my celebratory efforts seem minimalist in comparison to hers, me with my clear lights and greenery, her with kaleidoscope of fantastic rainbow-hues and sparkles for days.

Today is her birthday, and in the midst of all the snow outside my window, a winter-white cake seemed apt. Four moist layers of warmly-spiced carrot cake sandwich luscious cream cheese frosting, crowned with a delicate circle of floral-ish decorations. Charmingly vintage, I do hope Mom will approve.

Mom's Birthday Carrot Cake
I originally came up with this variation on a recipe from
Dorie Greenspan for our housewarming party. Mom had spoken fondly of a carrot cake from her childhood, and I was attempting to recreate it for her - happily, she said my efforts were a success. The use of both fresh and dried ginger adds another dimension of subtle, spicy heat.

Ingredients
2 cups all-purpose flour
2 teaspoons baking powder
2 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves
3/4 teaspoon salt
3 cups of grated carrots
1 cup chopped walnuts, toasted
1 cup sweetened, shredded coconut
zest of half an orange, grated fine
1/4 teaspoon fresh ginger, grated
1/2 cup golden raisins
1 1/2 cups granulated sugar
1/2 cup of dark or old-fashioned brown sugar
1 cup, plus two tablespoons canola oil
4 eggs

1 batch Cream Cheese Frosting from Ina Garten, I omit the almond extract

Preheat the oven to 325°F (160°C). Butter four 8-by-2-inch round cake pans. Dust with flour, and tap out any excess. Set aside.

Into a medium bowl, sift together flour, baking powder, baking soda, spices and salt. In another medium bowl, stir together the carrots, walnuts, coconut, fresh ginger and orange zest. Set aside.

In the bowl of a stand mixer with the paddle attachment, add the oil and sugars. Beat, on medium high speed, for about five minutes or until the mixture is smooth and light. Scrape down the sides of the bowl with a rubber spatula now and again.

Add eggs, one at a time, beating well after each addition and scraping down sides of bowl. Reduce speed to low and add the flour mixture, blending just until all the flour is incorporated. With the mixer still on low, add the carrots and stir to combine.

Divide the batter evenly between the four prepared cake pans and bake until golden and a wooden skewer inserted into the center comes out clean, about 25-30 minutes. Cool in pans on a wire rack for about 10 minutes, then turn out to cool completely (turn the cakes right side up).

Smear a bit of frosting on the base of your cake plate or stand. Place one layer on the cake plate, then place four strips of parchment paper around perimeter, tucking the edges under the cake - this parchment will keep the cake plate neat.

Spread between 1/4 to 1/3 of a cup of frosting over the cake (I never have measured, you are aiming for a thin, even layer), then place another cake on top. Repeat process with the next two layers and top with last remaining layer.

Spread top and sides of cake with thinly with frosting, forming what is called a crumb coat. It does not need to be perfect, but the cake should be completely covered so that crumbs will not migrate into the final coat. Chill for at 30 minutes or until the frosting is slightly firm to the touch.

Use the remaining frosting to coat the top and sides of the cake, as desired. Use a thin-bladed knife to score where the frosting meets the parchment paper to break the seal, and remove.

Makes one 8-inch cake.

Notes:
• This cake is exceedingly tender, which is why I use multiple cake pans instead of splitting the layers. You could easily use two pans to make two layers, adjusting the cooking time accordingly.
• The Cream Cheese Frosting is very soft, and not the easiest to pipe. If it gets too warm, chill both the cake and frosting for about 10 minutes to firm up. Even with such measures, keep in mind that this is not the type of frosting that allows for a perfectly-smooth finish.

Dominique and Cindy Duby are celebrated pâtissiers and chocolatiers, innovators and authors. Their striking desserts are legendary, as is their seemingly-boundless creativity. The husband and wife team have been the subject of critical acclaim and lauded with countless awards for their culinary achievements. With such an awe-inspiring resumé, I was nothing short of honoured when they agreed to (virtually) sit down with me for an interview via e-mail. Our conversation took place just before the release of their third cookbook, a study of crème brûlées - both sweet and savoury.

seven spoons: First off, the obvious question; why devote an entire book to crème brûlée?

DC Duby: Actually, it is our publisher who asked us to write a new series of books on single topics and this is the first one/topic. Crème brûlée is actually is really easy dessert to make for the home chefs but it also offer us, as chefs/authors, with a great challenge to be creative and expand on this topic. We believe that we offered some classics, but also a lot of new ideas, info on the creative process (flavour pairing), some of the science behind custard, et cetera. So this book is more than just basic recipes.

7S:Innovation seems one of your hallmarks; referencing classic pastry recipes, but reimagining them. Where do you find your inspiration?

DCD: As you mentioned, classics are the basis of our inspiration and we try to 'construct' (a constructivism approach is one of our basis for innovation) from there.

7S: What trends or ingredients are inspiring you right now?

DCD: As always, any ingredients that can expand the palette of traditional pastry making, we want to try it. We love using vegetables and/or herbs and spices in our sweets.

7S: You are known for pushing the boundaries of pastry, often employing an arsenal of scientific techniques in your repertoire. In fact, sections of your online boutique read like a chemistry textbook.How do you find a balance between technique and ingredient? What comes first in the development of a recipe?

DCD: We sell Elements which are culinary ingredients; you are right to say that they are chemicals but then you would have to call salt and sugar as chemicals as well! So we prefer that people refer to our Elements as specialty ingredients for modern cuisine, just the same way that starch (modified or not) became a new specialty ingredient used to thicken sauces instead of flour. As well as a cookbook, we want our site to be a boutique where [people can] buy products and also a site to get information We will have a lot more recipes posted in the new update next month as well as culinary videos to demo culinary techniques.

[In regards to the question of technique], we think that people sometimes seem to forget that a freezer was a very novel tool in its time. Liquid nitrogen was used by ice cream makers in the US in the early 1900, yet some people think that this a recent culinary innovation. We work with scientists all the time and they are always quick to point out that there is not that many new ideas in food science, just new ways of thinking. To answer your question, technique and ingredient are in symbiosis - if you have a great ingredient but apply a poor cooking technique (conventional or modern), the result will be mediocre and vice versa with a great technique applied on a poor quality ingredient. The design process for us is twofold; like scientists, we bring forth a hypothesis for a new dish or chocolate and first is flavour combination then it is texture.

7S: Your aesthetic is quite modern, minimalist and yet impactful. How do you approach presenting a dish or designing a confection?

DCD: We always tell chefs, why spend an already overloaded work day with making time consuming sugar or chocolate decors that most patrons will just put to the side and not eat? Time would be much better spent on the dish itself be with better ingredients, novel techniques, et cetera.

7S: Often you will hear chefs and cooks separate what they cook professionally, and what they cook in their own kitchen. What is the typical dinner (or favourite dinner) for two pastry chefs at home? What five pantry or refrigerator staples do you like to have stocked at all times?

Culinary speaking, [Dominique] trained as a 'savoury' chef first and [Cindy] only trained a sweet chef. Typically, unless we are doing research, we will not eat or make a dessert at home. But we do cook everyday and are very concerned with nutrition. We love using the pressure cooker, great meals in no time. We have three of them and two induction stoves so we can have a great healthy meal prepared in very little time.

It would be culinary death for us if we could or would only have five ingredients stocked at all times. We have lots of dry spices (garam masala, star anise, cinnamon, ancho and other chilies), Asian sauce bases like hoisin, lots of fresh herbs in our garden (parsley, basil, rosemary, sage, tarragon), and we always have a lot of vegetables from different alliums, roots like carrot, fennel, potatoes, and what ever else is available at the farmers market that we shop as at least twice a week like eggplant, savoy cabbage, parsnip. Not too much protein though except for fish.

7S: And finally, three questions in one. What is your favourite celebratory dessert?

DCD: A great carrot cake turn into a birthday cake is far better for us that a pretentious or badly executed multi-layer cake with rubbery mousses, dry biscuit bases, et cetera.

Your favourite comfort dessert?

DCD: We love chocolate and most derivatives of it. Depending on the season, we make ice cream or sorbet in our Paco Jet - fantastic. In the fall and winter, we love a pie made of pate sucrée filled with an almond cream and baked topped with pears or apples. When berries are good, a crispy puff pastry with vanilla pastry cream and fresh strawberries is great.

Your favourite guilty pleasure?

DCD: Great food with great wines.

Kitchen aid; reviewing In the Kitchen with Anna by Anna Olson

Even though one may not mean to become caught up in things, sometimes it is unavoidable. Such was my case recently, as a (thankfully-mild) strain of the chicken pox made its way through our little ones, forcing our household into a state of quarantine and oatmeal baths for two weeks. This was followed closely by an infection that had Mummy curled up on the couch, slippers on and blanket pulled up tight, for another few days. Suddenly almost a month has gone by, and it seems all in a blur.

Now we are about ankle-deep in holiday preparations; events with family and friends are already scheduled, decorations are already being considered, and menu ideas are already floating around in my head. Where did this autumn go? It feels like Halloween was just yesterday.

Lucky for us, I had the book In the Kitchen with Anna: New ways with the Classics standing by at the ready. In it, chef Anna Olson offers up meals and menus that have a nostalgic appeal; a bit retro, a bit kitch sometimes, but always tasty. This is feel-good eating at its best, and just the sort of food one craves when life gets a bit hectic.

While the book does include entertaining-worthy recipes like unctuous Mushroom Potato Brie Tarts and an impressive Garlic Roasted Turkey Crown with Chardonnay Pan Sauce, it is the modern classics like the Contemporary Cobb Salad, Ultimate Cheese Fondue and Baja Fish Tacos, that are, in my mind, the real draw.

Through the craziness over the last few weeks, I found myself turning to this book numerous times for inspiration. And rarely did it disappoint.

I have pledged my allegiance to steel-cut oats, but I tried Olson's version using the rolled variety when I found my cupboard was bare of the former. Surprisingly light due to the addition of oat bran, the oatmeal was delicious. So good in fact, that when mornings dawned cold and grey, I reached for this breakfast again and again.

The Rockwell Bake, a savoury bread pudding that combines all the flavours of Thanksgiving dinner, was hearty and soul-satisfying. Anna's Pot Roast was fairly-standard comfort fare, brightened through a second addition of vegetables towards the end of cooking. While good, however, what stole the show that night was the recommended accompaniment of Fluffy Dumplings. True to their title, these dumplings were pillowy-light, and an ideal way to sop up the roast's beer-soused gravy.

For those visiting the Niagara Region, Olson's two specialty food shops sell dishes from In the Kitchen with Anna as some of their prepared foods. It is a wonderful opportunity to taste some of the food before purchasing the book and also a testament to Olson's confidence in standing behind these recipes - a true mark of quality.

It was at her St. David's, Ontario, location that we were able to try the Beef, Caramelized Onion and Smoked Cheddar on Foccacia sandwich. Hot off of the panini press, the exterior was shatteringly crisp, giving way to melt-in-your-mouth slices of beef, accented by sweet onions, a slathering of grainy mustard and subtly-smoked cheese.

Since Olson is famous for her desserts, far be it from me to ignore that chapter. The Lemon Cheesecake Mousse tarts had an beautifully light texture with the perfect sharp citrus note. They managed to be delicate but luscious, all at once. Dangerously-easy to make are the Chocolate Almond Toffee Bars (photographed above, please see recipe below); to call these rich would be a gross understatement. A sturdy crust of oats and graham is scattered with both toffee and chocolate, then almonds, and finally a blanketing of sweet condensed milk. This modest effort results in a bar cookie that is tender in its belly, but slightly burnished and crisp above. Ridiculously addicting stuff.

Only one recipe fell short of expectation; the Artichoke Asiago Squares. The appetizer, somewhat akin to crustless quiche, is billed to taste like the popular dip of the same name and readers are urged "if there is no other recipe you make from this book, please make it this one." With such an introduction, these were a definite must-try. But while the squares are good, none of my tasters thought them great. The consensus was that they were best served warm, but even then the texture was not a favourite and some found the asiago could have been more pronounced. I would not call this a failure, but I would say that there are stronger dishes in the book.

The book itself is bright and colourful. The food looks fresh, shot simply, but beautifully, by Ryan Szulc. Minimally styled by Olson, the images are homey and inviting, with little fuss marring our look at the the food.

I particularly enjoyed how the recipes were laid out. Accompanying each was not only general notes included in the header, but also a three-part footnote outlining the taste, technique and tale of that particular dish. This additional information included more in-depth information about the ingredients or preparation, and also were a peek into the personality of Olson herself; the chatty, convivial tone was charming to read.

From the every day to almost every celebration, for lazy weekends and when the weekdays are flying by, In the Kitchen with Anna: New Way with the Classics includes recipes that are excellent additions to any cook's repertoire. Showing us easy, accessible cooking with touches that make each dish feel special, Olson makes a lovely kitchen companion.

Chocolate almond toffee bars
This recipe is one of my most requested, so I'm happy to include it in this book.

Ingredients
1 1/2 cups (375 ml) rolled oats
1/2 cup (125 ml) graham cracker crumbs
1/4 tsp (1 ml) fine salt
1/2 cup (125 ml) unsalted butter, melted
1 cup (250 ml) Skor toffee bits
1 cup (250 ml) chocolate chips
1 cup (250 ml) sliced almonds
1 can sweetened condensed milk

Preheat the oven to 350°F (180°C). Grease and line an 8-inch (2 L) square pan with parchment paper so that the paper hangs over the sides of the pan.

Stir the oats, graham crumbs and salt in a bowl to combine, then stir in the melted butter. Press the crumbly oat mixture into the prepared pan. Sprinkle Skor bits evenly on top, followed by chocolate chips and sliced almonds. Pour condensed milk evenly over pan (it will sink in as it bakes) and bake for 30 to 40 minutes, or until the top is golden brown and the edges are bubbling. Cool to room temperature in the pan, then chill for at least 4 hours before slicing into bars.

Store toffee bars in the refrigerator for up to a week.

Makes one 8"x8" pan.

Taste
This is decadence in a pan. The sinful combination of chocolate, toffee and almonds enveloped in condensed milk that caramelizes as it bakes is irresistible. At least these have oats in them to redeem themselves, just a little bit.


Technique
This is a simple recipe to execute—you gather the ingredients and layer them, basically. The challenge is in waiting for them after they've finished baking!

Tale
My head pastry chef at Olson Foods + Bakery, Andrea, brought this recipe to my attention. She is an excellent baker, and we go way back. She started with me as a high school co-op student, while I was just picking up professional baking myself on the job, so we learned together. That was about 15 years ago, and after her stint at cooking school and gaining other work experience, I'm thrilled that we are working together again after all these years.

Present imperfect

It just so happened that I was watching Heston Blumenthal's "In Search of Perfection" on the same day that my dear Sean requested some peanut butter cookies. For those not familiar with the show, it follows the Michelin-starred chef as he seeks out the quintessential recipe for various dishes. Whether it be Peking duck or risotto, Mr. Blumenthal looks to understand every aspect of the recipe, studying (in great detail) the importance and contribution of each ingredient, preparation and cooking method.

In this episode he tackled trifle. He examined its historical origins, researched the way tastes move around the human palate, and considered the effects of temperature on textural perception. A fascinating half hour later he presented his final imagining of the dessert - complete with saffron syllabub, strawberry jelly and a sweetened olive pureé.

Throughout the exercise, I could not help but compare his to the "standard" trifle that appears on our holiday table; a base of fluffy lemon-scented sponge, then scarlet-red raspberries staining layers of creamy custard and mascarpone cream, all topped off with bronzed shards of almond brittle. A far cry from Mr. Blumenthal's version, but my family will settle for nothing less.

And although this trifle has been deemed "perfect", I am still one to tweak things a little, depending on the fruit available, the audience I am serving or to better suit my whims.

Now I was thinking about the search for perfection, and the infinite possibilities when it comes to food. Every person perceives things differently, every person responds to flavours and textures in their own way. Every person has their own set of memories that are conjured by a smell or a taste. Each of us has a different set of criteria to satisfy; the journey towards finding the definitive form of any dish really is, well, endless.

But I digress. Back to Sean's request. While he had provided me with a recipe for his cookies (from Martha Stewart's cookie book) I could not help but delve a little deeper. When I asked him what kind of peanut butter cookie he was looking for, Sean immediately replied "soft and chewy." The Martha recipe sounded perfectly delicious, but the photo showed a cookie that looked more crisp than tender. After that, I consulted Dorie Greenspan's book for her advice, but came away empty handed.

In the end, I combined a few recipes, and drew upon my experience with baking. Albeit a bit unorthodox in measurements, I patched together a recipe that uses brown sugar for tenderness and caramel tones, granulated sugar for body and a bit of crispness, salt for added depth, and crunchy peanut butter for texture. Upon first bite, Sean declared these the best he'd ever had. Not too bad for a first try.

I am already thinking about what to change on my next attempt.

Soft and chewy peanut butter cookies
Living up to their title, these cookies are unbelievably tender. A great candidate for ice cream sandwiches - with a dulce de leche filling perhaps? Although I specify chunky peanut butter, that was only for personal preference. This recipe would work perfectly well with smooth.

Ingredients

1 cup plus 1 tablespoon all-purpose flour
1/4 teaspoon kosher salt (up to 1/2 teaspoon if you particularly like savoury sweets)
3/4 teaspoon baking soda
1/2 cup (8 tablespoons/1 stick) unsalted butter, at room temperature
3/4 cup chunky peanut butter
1/2 cup plus 2 tablespoons packed golden or dark brown sugar
1/4 cup plus 2 tablespoons granulated sugar
1 large egg
1/2 teaspoon vanilla extract
sea salt, optional, for sprinkling

Preheat oven to 350°F (175°C). Use parchment paper to line several standard baking sheets and set aside.

In a bowl, sift together the flour, salt and baking soda. Set aside.

In the bowl of a stand mixer with the paddle attachment, or with a hand mixer, cream together the butter and peanut butter until light and fluffy. Add the sugars and beat on high for three minutes, scraping down the sides of the bowl as needed.

Add the egg and vanilla, then mix on medium speed until well blended.

Add the dry ingredients to the bowl and stir to just combine. Refrigerate the batter for 10-15 minutes to set up and chill thoroughly.

Using a 1 1/4" ice cream scoop dish out mounds of dough onto the prepared baking sheet (alternatively, use a generous 2 tablespoons of batter for each cookie), spacing them about 2 inches apart. Dip a fork into warm water and use the tines to press the dough balls lightly; you only want to slightly flatten their shape and leave the imprint of the fork. Freshly dip the fork between pressing each cookie. Sprinkle with sea salt, if desired.

Bake in the preheated oven for 18 minutes, rotating the sheets once during baking. Cool on pan for two minutes, then remove to a baking rack to cool completely.

Makes 18.

Notes:
• For a crisper cookie, bake for 20 minutes.
• Toffee bits, chopped peanuts or chocolate chips would all be great additions to this cookie.

A master's work; a review of Chocolate Epiphany

When I was little, I took piano lessons to little success. Even though I could manage to replicate notes on the page, I never had the 'sense' for the keys that makes one feel in ownership of the music. Nonetheless, I would spend the requisite time practicing on the keyboard at home, repeating the disjointed notes over and over until I hoped I had mastered them.

It was during these practices that my father would sometimes wander into the room and take over the keys; though wholly self-taught, he had such an ear for music that he could easily reproduce my melodies in their entirety. What's more, he would infuse them with nuance and a character deeper than the notes themselves.

In that simple exercise I saw what it mean to be an artist.

I had a similar feeling of revelation when I had the opportunity to review François Payard's third book, Chocolate Epiphany (Clarkson Potter, 2008). Though a fairly-proficient home baker, I could not help but be awed by the chocolate creations featured within. From the straightforward to the fanciful to the elegant, Payard (with Anne E. McBride) presents confections as beautiful as they are delicious.

Though focused solely on chocolate, the book covers a surprising breadth of recipes. After the helpful introductory guide, breakfast and brunch dishes are offered first, followed by chapters highlighting specific dessert forms (cookies, cakes and mousses, among others). The recipes encompass both the traditional and the unexpected, with classic favourites placed alongside inventive combinations of flavours and textures. There is no prejudice regarding chocolate varieties, with white, milk and dark all given the opportunity to shine.

As to be expected with his pedigree, the acclaimed pastry chef, James Beard Award winner and owner of a collection of pâtisseries/bistros includes recipes that are somewhat intimidating at first glance. These require a good deal of patience, reasonable skill and, in many cases, specialty equipment.

For example, the American Opera Cake calls for no less than four separate component recipes and three pages of instructions. That said, the expertly-detailed steps allow for stunning results that merit the effort. Between the chocolate cake layers Payard ingeniously switches the classic coffee buttercream filling for a peanut version alternated with a decadent peanut butter ganache. If that was not enough, a dark chocolate ganache is finally poured over all. The finished cake is a masterpiece of textures and a show-stopping celebration dessert to say the least.

Equally impressive are the Chocolate Pavlovas with Chocolate Mascarpone Mousse. Here Payard innovates by reconfiguring the form from a simple flat base into a full sphere of meringue filled with liqueur-laced mousse and topped with a flourish of mascarpone cream. Again, this is a recipe that one should carefully read before attempting, but the instructions are well laid out, concise and easy to follow.

Amongst these rather grand recipes Payard sprinkles in some beatifully-simple ones. Triple Chocolate Financiers (recipe) are a perfect little treat alongside coffee, Chocolate Rice Crispies are a bit of kitchy fun, and Chocolate Blinis elevate breakfast to a whole new level.

I was particularly fond of the Chocolate Meringue Tart (pictured, above). A cocoa makeover of the lemon meringue version from his childhood, Payard creates a recipe that is easy to assemble but with outstanding results. His Sweet Tart Dough comes together quickly and is a joy to work with. It is baked until golden, then filled with a luscious dark chocolate filling and crowned with peaks of scorched Swiss Meringue. Absolutely delicious.

One caveat, I did end up with an excess of filling even though I followed the recipe to the specific weight measurement of each ingredient.

Rounding out the contents is an indispensable chapter of basics; buttercreams, Crème Anglaise, doughs, and often-used base cakes are explained here, with tips and tricks usually only learned with years of experience. For those wishing to replicate the exquisite decorations that adorn many of the desserts, there are also step-by-step directions to creations like chocolate fans, drops, sticks, and shards.

The sumptuous photographs by Rogerio Voltan are tempting to say the least; with tightly cropped images that beautifully convey the various textures and elements of the recipes. My only complaint is that I could not find photo captions for the desserts featured on the chapter cover pages. While this information is included in the general index, the omission of labels alongside the specific images might be frustrating to those who find it difficult to match the photos with the corresponding recipe.

Nonetheless, Chocolate Epiphany is decadence at its best; truly an opus of cacao bean, with a Maestro's passion and expertise leading the way.
